Designed as the busy woman's daily guide to Bengali cooking, keeping in mind the fact that she is short on time and energy, there are some exotic and elaborate, and some simple, but very traditional Bengali recipes in this collection.
It is widely believed that Bengali cuisine is all about fish and desserts but the idea is quite misplaced. What most people do not know is that Bengalis eat a huge variety of vegetarian dishes which are low on oil and spices. So, vegetarians and health consciousness people will find this book as interesting and useful as will the strict non-vegetarian.
As this book has been written primarily with the busy working woman in mind, the recipes are presented in menus. The book is divided into sections dedicated to meals for working days, for weekends, for parties for the different seasons, and so on.
Bengali cuisine-a term synonymous with good food, plenty of fish and desserts! What is not, perhaps, so well know is that it has a vast bank of vegetarian dishes, has tremendous variety in terms of taste, and is healthy because of the use of much less oil and spices as compared to say. North Indian or Rajasthani food.
There is, today, a renewed interest in Bengali cuisine, as seen from personal experience. And that is the motivation behind this collection of recipes. I hope I have achieved what I wanted to-to bring to you the simple yet rich and diverse taste of Bengali food.
This book is dedicated to my mother not only because she shared her fabulous recipes for this collection, but also because she was instrumental in making me start again when I had given up after the initial burst of enthusiasm.
Friends and family have all helped and encouraged me in my endeavour. This book is dedicated to all my well-wishers who encouraged me in this work, to my mother and mother-in-law from whom I learnt cooking; to my daughter and husband, Ujjainee and Pranay for their encouragement; to all those who always appreciated my cooking – especially my in-laws and my sisters, Ratna and Rita
